Ingredients

For the Meatloaf:

1 ½ lbs ground beef (80/20)

1 cup breadcrumbs (preferably Italian-style)

1 cup milk

1 medium onion, finely chopped

2 cloves garlic, minced

2 large eggs

2 tbsp Worcestershire sauce

2 tbsp ketchup (plus extra for glaze)

1 tsp dried oregano

1 tsp dried thyme

1 tsp salt

½ tsp black pepper

½ tsp smoked paprika

For the Mashed Potatoes:

2 lbs potatoes (Yukon Gold or Russet), peeled and cubed

½ cup heavy cream

4 tbsp unsalted butter

Salt and pepper to taste

Optional: Fresh chives or parsley for garnish

Instructions

Prepare the Meatloaf Mixture:

    - In a large bowl, combine the ground beef, breadcrumbs, milk, finely chopped onion, minced garlic, eggs, Worcestershire sauce, ketchup, oregano, thyme, salt, black pepper, and smoked paprika. Mix until just combined, being careful not to overwork the meat.

      Shape and Bake:

        - Preheat your oven to 350°F (175°C). Transfer the meat mixture into a loaf pan or shape it into a loaf on a lined baking sheet. Smooth the top and spread a thin layer of ketchup over the surface for a flavorful glaze.

          - Bake for about 1 hour or until the internal temperature reaches 160°F (70°C). Let it rest for 10 minutes before slicing.

            Cook the Mashed Potatoes:

              - While the meatloaf is baking, place the peeled and cubed potatoes into a large pot and cover with cold, salted water. Bring to a boil and cook until the potatoes are fork-tender, about 15-20 minutes.

                - Drain the potatoes well and return them to the pot. Add heavy cream and butter, then mash to your desired consistency. Season with salt and pepper to taste.

                  Serve:

                    - Spoon out the creamy mashed potatoes onto plates, top with slices of meatloaf, and garnish with chopped chives or parsley if desired. Enjoy your homestyle meal!
