1 lb boneless, skinless chicken breasts (cooked and shredded)

1 cup frozen peas and carrots mix

1 cup diced potatoes (cooked until tender)

1 small onion (chopped)

2 cloves garlic (minced)

1 cup chicken broth

1 cup heavy cream

1/4 cup all-purpose flour

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon butter

1 package (2 crusts) refrigerated pie crusts, or homemade flaky pastry dough

Instructions
 

Prepare the Filling: In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic; sauté for about 3-4 minutes until softened.

    Combine Ingredients: Stir in the shredded chicken, cooked potatoes, frozen peas and carrots, thyme, rosemary, salt, and pepper. Mix well and cook for another 2-3 minutes to combine flavors.

      Make the Sauce: Sprinkle flour over the chicken and vegetable mixture, stirring to coat evenly. Gradually pour in chicken broth, stirring continuously to avoid lumps. Add heavy cream and continue to cook until the mixture thickens, about 5-7 minutes. Remove from heat and let cool slightly.

        Prepare the Crust: Preheat the oven to 425°F (220°C). Roll out one pie crust and fit it into a 9-inch pie dish, trimming any excess crust hanging over the edges.

          Add the Filling: Pour the chicken filling into the pie crust, spreading it evenly.

            Top it Off: Roll out the second pie crust and drape it over the filling. Seal the edges by crimping with your fingers or a fork. Cut several slits in the top crust to allow steam to escape.
