Herb Roasted Cornish Hens

Ingredients
  

2 Cornish hens (about 1.5 pounds each)

4 tablespoons olive oil, divided

2 teaspoons fresh rosemary, chopped

2 teaspoons fresh thyme, chopped

1 teaspoon fresh sage, chopped

4 cloves garlic, minced

1 lemon, zested and quartered

Salt and black pepper to taste

1 cup low-sodium chicken broth

1 cup baby carrots

1 medium onion, quartered

1 cup baby potatoes, halved

Instructions
 

Preheat the Oven:

    Preheat your oven to 425°F (220°C).

      Prepare the Hens:

        Rinse the Cornish hens under cold water and pat them dry with paper towels. Trim any excess fat around the cavity.

          Make the Herb Mixture:

            In a small bowl, combine 3 tablespoons of olive oil, rosemary, thyme, sage, minced garlic, lemon zest, salt, and black pepper. Mix well to form a paste.

              Season the Hens:

                Gently loosen the skin of the Cornish hens using your fingers, being careful not to tear it. Rub half of the herb mixture directly onto the meat under the skin. Use the remaining mixture to rub the outside of the hens.

                  Stuff the Hens:

                    Stuff each hen with lemon quarters to infuse flavor as they roast.

                      Prepare the Roasting Pan:

                        In a large roasting pan, place the baby carrots, onion quarters, and halved potatoes. Drizzle with the remaining tablespoon of olive oil and season with salt and pepper. Toss to coat evenly.

                          Position the Hens:

                            Place the seasoned Cornish hens on top of the vegetables in the roasting pan, breast side up.

                              Add Chicken Broth:

                                Carefully pour the chicken broth into the bottom of the roasting pan, avoiding pouring it over the hens to maintain the crispy skin.

                                  Roast the Hens:

                                    Roast in the preheated oven for about 1 hour to 1 hour and 10 minutes, or until the internal temperature reaches 165°F (74°C) when checked at the thickest part of the thigh. Baste the hens with pan juices halfway through cooking.

                                      Rest and Serve:

                                        Once cooked, remove the roasting pan from the oven and let the hens rest for about 10 minutes. This allows the juices to redistribute. Serve the hens on a platter with the roasted vegetables.
