Herb Butter Roasted Turkey Breast

1 (4-5 lbs) turkey breast, bone-in and skin-on

1 cup unsalted butter, softened

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme, finely chopped

1 tablespoon fresh sage, finely chopped

4 cloves garlic, minced

Zest of 1 lemon

Salt and pepper, to taste

2 cups low-sodium chicken broth

1 medium onion, quartered

2 carrots, chopped

2 stalks celery, chopped

Fresh herbs for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (165°C).

    Prepare the Herb Butter: In a mixing bowl, combine the softened butter, rosemary, thyme, sage, minced garlic, lemon zest, salt, and pepper. Mix well until all the herbs and seasonings are evenly distributed.

      Prepare the Turkey: Pat the turkey breast dry with paper towels. Gently lift the skin from the breast meat without tearing it, creating a pocket for the herb butter. Use your fingers to spread about half of the herb butter under the skin, ensuring it covers most of the meat. Rub the remaining herb butter all over the outside of the turkey breast.

        Set the Aromatics: In a roasting pan, arrange the quartered onion, chopped carrots, and celery at the bottom. This will create a flavorful base for the turkey to roast on and add extra depth to your cooking broth.

          Add the Turkey: Place the coated turkey breast on top of the vegetables in the roasting pan. Pour the chicken broth around the turkey breast, ensuring you do not wash off the herb butter.

            Roast the Turkey: Tent the turkey breast loosely with aluminum foil to prevent over-browning. Roast in the preheated oven for approximately 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C). Remove the foil for the last 30 minutes to allow the skin to crisp and brown.

              Rest the Turkey: Once cooked, remove the turkey from the oven and let it rest for at least 20 minutes before slicing. This helps the juices redistribute within the meat for maximum flavor and tenderness.

                Serve and Enjoy: Slice the turkey breast and serve it on a platter. You can drizzle with some of the flavorful broth, and garnish with fresh herbs if desired.
