1 cup green lentils, rinsed and drained

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 medium zucchini, diced

1 bell pepper (any color), diced

1 can (14 oz) diced tomatoes, with juices

6 cups vegetable broth

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon dried thyme

Salt and pepper, to taste

2 tablespoons olive oil

1 cup fresh spinach or kale, roughly chopped

Fresh parsley or cilantro, for garnish (optional)

Lemon wedges, for serving (optional)

Prepare your ingredients: Begin by rinsing the lentils thoroughly under cold water and draining them. Chop all the vegetables (onion, garlic, carrots, celery, zucchini, and bell pepper) to ensure everything is ready for cooking.

    Sauté the aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing for about 3-4 minutes until the onion is translucent and fragrant.

      Add the vegetables: Stir in the carrots, celery, zucchini, and bell pepper. Cook for an additional 5-6 minutes, stirring occasionally, until the vegetables begin to soften.

        Incorporate spices: Sprinkle in the cumin, smoked paprika, thyme, salt, and pepper. Mix well to coat the vegetables in the spices and sauté for another minute.

          Add lentils and liquids: Pour in the vegetable broth and add the rinsed lentils along with the can of diced tomatoes (do not drain). Bring the mixture to a boil.

            Simmer the soup: Once boiling, reduce the heat to low and let the soup simmer uncovered for about 20 minutes. Stir occasionally, allowing the lentils to cook through and soften.

              Finish with greens: When the lentils are tender, stir in the chopped spinach or kale. Cook for an additional 3-4 minutes until the greens are wilted. Taste and adjust seasoning with more salt and pepper if necessary.
