Hearty Vegetable and Lentil Soup for Dinner

1 cup dried green or brown lentils, rinsed and drained

2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

3 medium carrots, chopped

2 celery stalks, chopped

1 bell pepper (any color), diced

1 medium zucchini, chopped

1 cup green beans, trimmed and cut into 1-inch pieces

6 cups vegetable broth

1 can (14 oz) diced tomatoes with juices

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and pepper, to taste

2 cups kale or spinach, chopped (optional for added greens)

Fresh herbs (parsley or cilantro) for garnish

Instructions
 

Sauté the Base: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.

    Add Vegetables: Toss in the chopped carrots, celery, bell pepper, and zucchini. Sauté for about 5-7 minutes until the vegetables begin to soften.

      Incorporate Lentils and Broth: Add the rinsed lentils to the pot, followed by the green beans, vegetable broth, and diced tomatoes (with their juices). Stir well to combine.

        Season the Soup: Sprinkle in the ground cumin, smoked paprika, dried thyme, and season with salt and pepper to taste. Bring the mixture to a boil.

          Simmer: Once boiling, reduce the heat to low, cover the pot, and let the soup simmer gently for about 30-35 minutes, or until the lentils are tender.

            Add Greens: If using, stir in the chopped kale or spinach during the last 5 minutes of cooking. This will help the greens wilt without losing their vibrant color.

              Taste & Adjust: Once complete, taste the soup and adjust the seasoning if necessary. Add more salt, pepper, or herbs to your preference.
