1 lb (450g) ground beef

1 medium onion, chopped

3 cloves garlic, minced

2 medium carrots, diced

2 stalks celery, diced

1 medium zucchini, diced

1 cup green beans, chopped

1 can (14.5 oz) diced tomatoes, with juice

4 cups beef broth

1 teaspoon dried thyme

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Heat the Oil: In a large pot, heat the olive oil over medium-high heat. Add the chopped onion and sauté for 2-3 minutes until translucent.

    Brown the Beef: Add the ground beef to the pot, breaking it up with a spoon. Cook for about 5-7 minutes until browned, and drain any excess fat.
