2 medium sweet potatoes

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon smoked paprika

½ teaspoon garlic powder

¼ teaspoon salt

1 cup black beans, rinsed and drained

1 cup cherry tomatoes, halved

½ cup corn (fresh, frozen, or canned)

1 small red onion, diced

1 cup shredded cheddar cheese (or a dairy-free alternative)

1 avocado, diced

Fresh cilantro, for garnish

Jalapeños, sliced (optional)

Salsa, for serving

Instructions
 

Start by washing and peeling the sweet potatoes. Slice them into thin rounds or triangular shapes for optimal nacho experience. Aim for about 1/4 inch thick.

    In a large bowl, toss the sweet potato slices with olive oil, chili powder, smoked paprika, garlic powder, and salt, making sure every piece is well-coated.

      Preheat your air fryer to 375°F (190°C).

        Once preheated, place the sweet potato slices in the air fryer basket in a single layer, working in batches if necessary. Air fry for 10-12 minutes, flipping halfway through, until they are golden and slightly crispy.

          While the sweet potatoes are air frying, prepare your toppings. In a mixing bowl, combine the black beans, cherry tomatoes, corn, and diced red onion.

            When the sweet potato rounds are done, layer them on a large serving platter or baking sheet. Sprinkle the bean mixture evenly over the top.

              Generously sprinkle the shredded cheddar cheese over the nacho base, then return the platter to the air fryer for an additional 2-3 minutes, just until the cheese has melted.

                Once melted, remove from the air fryer and let cool for a minute. Top the nachos with diced avocado, fresh cilantro, and jalapeños if desired.

                  Serve warm with your favorite salsa on the side for dipping!
