2 ripe peaches, sliced

4 cups kale, chopped

1 cup cherry tomatoes, halved

1 medium cucumber, diced

1/2 red onion, thinly sliced

1/4 cup crumbled feta cheese (or goat cheese for a creamier option)

1/4 cup walnuts, roughly chopped

1/4 cup fresh basil, torn

1/4 cup extra virgin olive oil

2 tablespoons balsamic vinegar

1 tablespoon honey or maple syrup

Salt and pepper, to taste

Optional: 1 avocado, diced for added creaminess

Prepare the Kale: In a large mixing bowl, add the chopped kale. Drizzle with a bit of olive oil and a pinch of salt. Massage the kale gently for about 2-3 minutes until it becomes tender and vibrant in color. This helps to soften it.
