Hatch Chili Grilled Cheese Sandwich

This mouthwatering sandwich pairs gooey sharp cheddar and cream cheese with the smoky heat of roasted Hatch green chilies, all tucked between crispy sourdough slices. Ingredients
  

2 slices of sourdough bread

2 tablespoons unsalted butter, softened

1 cup shredded sharp cheddar cheese

1/2 cup roasted hatch green chilies, diced (canned or fresh)

1/4 cup cream cheese, softened

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

Optional: fresh cilantro for garnish

Instructions
 

Prepare the Spread: In a small bowl, mix the cream cheese, garlic powder, onion powder, and a pinch of salt and pepper until well combined. Set aside.

    Assemble the Sandwich: Take one slice of sourdough bread and spread a generous layer of the cream cheese mixture on one side. Sprinkle half of the shredded cheddar cheese evenly over the cream cheese layer. Evenly distribute the diced hatch green chilies on top of the cheese, then finish with the remaining cheddar cheese. Place the second slice of bread (unbuttered side) on top to complete the sandwich.

      Butter the Bread: Spread softened butter evenly on the outside of both slices of the sandwich. Ensure an even coating for a perfect golden crust.

        Grill the Sandwich: Heat a skillet or griddle over medium heat. Place the sandwich in the skillet and cook for about 3-4 minutes on one side until golden brown. Flip the sandwich carefully and grill the other side for another 3-4 minutes, or until the cheese is melted and both sides are nicely browned.

          Serve: Remove the sandwich from the skillet and let it cool for a minute. Cut the sandwich in half and garnish with fresh cilantro, if desired. Serve hot and enjoy the cheesy, spicy goodness!
