Ingredients

1 cup almond flour

1/2 cup rolled oats

1/4 cup coconut sugar

1/4 cup unsweetened applesauce

1/4 cup almond butter (or peanut butter)

1 tsp vanilla extract

1/2 tsp baking soda

1/2 tsp salt

1/3 cup sugar-free chocolate chips

Optional: 1/4 cup chopped nuts (e.g., walnuts or pecans)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, combine the almond flour, rolled oats, coconut sugar, baking soda, and salt. Stir until well mixed.

Combine Wet Ingredients: In a separate bowl, mix together the applesauce, almond butter, and vanilla extract until smooth and creamy.

Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Ensure everything is well mixed but do not overmix.

Add Chocolate Chips: Gently fold in the sugar-free chocolate chips and optional nuts if using.

Form Bites: Using a tablespoon or cookie scoop, drop rounded scoops of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes or until the edges are golden brown.

Cool: Remove from the oven and let the bites cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Store: Once cooled, store the chocolate chip bites in an airtight container for up to a week, or freeze them for longer storage.
