Ground Turkey and Sweet Potato Hash

1 lb ground turkey

2 medium sweet potatoes, diced (about 2 cups)

1 small onion, chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 cup spinach (fresh or frozen)

1 tsp smoked paprika

1/2 tsp cumin

1/2 tsp salt (adjust to taste)

1/4 tsp black pepper

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Optional: hot sauce for serving

Instructions
 

Prepare the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes, season with a pinch of salt, and sauté for about 8-10 minutes, stirring occasionally until they start to soften and caramelize.

    Add Aromatics: Once the sweet potatoes begin to soften, push them to one side of the skillet, add remaining olive oil and then add the chopped onion and garlic to the other side. Sauté until the onion becomes translucent, about 2-3 minutes.

      Incorporate Peppers: Stir in the diced red bell pepper and continue to cook for another 3-4 minutes until the peppers are tender.

        Cook the Turkey: Add the ground turkey to the skillet. Break it up with a spatula and cook until no longer pink, about 5-7 minutes.

          Season the Mixture: Sprinkle in the smoked paprika, cumin, salt, and black pepper. Mix everything together well and cook for another 2-3 minutes to let the flavors blend.

            Add Spinach: If using fresh spinach, stir it in now, allowing it to wilt. If using frozen spinach, make sure it's thawed and well-drained before adding; stir to incorporate.

              Final Touches: Once everything is well-mixed and heated through, taste and adjust the seasoning, adding more salt or pepper as needed.

                Serve: Remove from heat. Garnish with fresh parsley and serve hot. Add a dash of hot sauce on top if desired.
