1 red bell pepper, sliced

1 green bell pepper, sliced

1 yellow bell pepper, sliced

1 medium red onion, sliced

2 medium zucchinis, sliced

8 oz. mushrooms, sliced

3 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon garlic powder

Salt and pepper to taste

Juice of 1 lime

6 small flour or corn tortillas

Fresh cilantro for garnish

Avocado slices or guacamole (optional)

Sour cream (optional)

Instructions
 

Prepare the Marinade: In a large bowl, combine the olive oil, chili powder, cumin, garlic powder, salt, pepper, and lime juice. Mix well.

    Marinate the Vegetables: Add the sliced bell peppers, onion, zucchini, and mushrooms to the marinade. Toss until all the vegetables are well coated. Let them marinate for at least 30 minutes, or up to 2 hours for more intense flavor.

      Preheat the Grill: Preheat your grill to medium-high heat. If using a grill pan, heat it over medium-high heat on the stovetop.

        Grill the Vegetables: Once the grill is hot, place the marinated vegetables directly on the grill grates or in a grill basket. Grill for about 5-7 minutes, turning occasionally, until the vegetables are tender and have nice grill marks.

          Warm the Tortillas: While the veggies are grilling, place the tortillas on the grill for about 30 seconds on each side, just until warmed. Alternatively, you can wrap them in foil and place them on the grill away from direct heat.

            Assemble the Fajitas: Remove the grilled vegetables from the grill and set them aside. Take a warm tortilla, fill it generously with the grilled veggie mixture, and garnish with fresh cilantro and avocado slices or guacamole if desired.
