Grilled Pesto Chicken Veggie Skewers

1 lb (450g) boneless skinless chicken breasts, cut into 1-inch cubes

1 cup fresh basil pesto (store-bought or homemade)

1 red bell pepper, cut into 1-inch pieces

1 zucchini, sliced into thick rounds

1 medium red onion, cut into wedges

1 cup cherry tomatoes

2 tablespoons olive oil

Salt and pepper to taste

Skewers (wooden or metal)

Marinate the Chicken: In a large bowl, combine the chicken cubes with half of the pesto. Stir well to ensure all pieces are evenly coated. Cover and marinate in the refrigerator for at least 30 minutes or up to 2 hours for more intense flavor.

    Prepare the Veggies: While the chicken is marinating, prepare the vegetables. In a separate bowl, toss the red bell pepper, zucchini, red onion, and cherry tomatoes with olive oil, salt, and pepper until evenly coated.

      Soak Skewers (if using wooden): If you’re using wooden skewers, soak them in water for 30 minutes to prevent them from burning on the grill.

        Assemble the Skewers: Preheat your grill to medium-high heat. Thread the marinated chicken pieces and the prepared vegetables onto the skewers, alternating between the chicken and different veggies for an appealing presentation.

          Grill the Skewers: Place the skewers on the preheated grill. Cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through (internal temperature should reach 165°F/75°C) and the vegetables are tender with grill marks. Brush with remaining pesto during the last few minutes of cooking for extra flavor.
