Grilled Corn Tacos

4 ears of fresh corn, husked

8 small corn tortillas

1 cup black beans, drained and rinsed

1 red bell pepper, diced

1 avocado, diced

1 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/2 cup crumbled feta cheese (or queso fresco)

1/4 cup fresh cilantro, chopped

Juice of 2 limes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon chili powder

Salt and pepper to taste

Optional: Hot sauce for serving

Instructions
 

Grill the Corn:

    Preheat your grill to medium-high heat. Brush the corn with olive oil and sprinkle with garlic powder, chili powder, salt, and pepper. Place the ears directly on the grill. Grill for about 10-15 minutes, turning occasionally, until the corn is tender and has nice grill marks. Remove from heat and let cool slightly.

      Prepare the Corn Kernels:

        Once the corn is cool enough to handle, cut the kernels off the cob using a sharp knife and place them in a mixing bowl. Add diced red bell pepper, black beans, cherry tomatoes, red onion, and cilantro. Squeeze lime juice over the mixture and toss to combine. Adjust seasoning with salt and pepper to taste.

          Warm the Tortillas:

            In a skillet, lightly warm the corn tortillas over low heat for about 30 seconds on each side, or until pliable. Alternatively, wrap them in aluminum foil and warm them on the grill.

              Assemble the Tacos:

                For each taco, spoon a generous amount of the corn mixture onto a tortilla. Top with diced avocado and a sprinkle of feta cheese.
