2 boneless, skinless chicken breasts

3 cups cubed seedless watermelon

4 cups mixed greens (arugula, spinach, and romaine)

1/2 cup crumbled feta cheese

1/4 cup red onion, thinly sliced

1/4 cup fresh mint leaves, chopped

1/4 cup olive oil

2 tablespoons balsamic vinegar

1 tablespoon honey

Prep the Chicken: In a bowl, season the chicken breasts generously with salt and pepper. Set aside to marinate while you prepare the grill or a grill pan.
