Grilled Balsamic Vinaigrette Sandwich

Ingredients
  

2 slices of sourdough bread

1 cup fresh spinach leaves

1 medium ripe tomato, sliced

1 ripe avocado, sliced

1/2 cup fresh mozzarella cheese, sliced

1/4 cup balsamic vinaigrette (store-bought or homemade)

1 tablespoon olive oil

Salt and pepper to taste

Optional: Fresh basil leaves for garnish

Prepare the Balsamic Vinaigrette (if making homemade): In a small bowl, whisk together 1/4 cup balsamic vinegar, 1/2 cup olive oil, 1 teaspoon Dijon mustard, 1 teaspoon honey, salt, and pepper to taste. Set aside.

    Assemble the Sandwich: On one slice of sourdough bread, layer the spinach, sliced tomatoes, avocado, and mozzarella cheese.

      Season: Drizzle balsamic vinaigrette over the layered ingredients. Sprinkle salt and pepper to enhance the flavors. If desired, add a few fresh basil leaves for extra aroma and taste.

        Top the Sandwich: Place the second slice of sourdough bread on top.

          Grill the Sandwich: Heat a skillet or grill pan over medium heat and add the olive oil. Once hot, carefully place the sandwich in the pan. Grill for about 3-4 minutes on each side, pressing down gently with a spatula until the bread is golden brown and the cheese is melted.
