Ingredients

6 large eggs

1 cup fresh spinach, chopped

1/2 cup green chili peppers, diced (mild or hot, based on your preference)

1 cup shredded cheddar cheese

1/4 cup milk (or your choice of non-dairy milk)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

Optional: Fresh cilantro for garnish

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or line with muffin liners for easy removal.

Prepare the Egg Mixture: In a large mixing bowl, crack the 6 eggs and whisk them until well blended. Add in the milk, garlic powder, onion powder, salt, and black pepper. Whisk until combined.

Add Vegetables and Cheese: Fold in the chopped spinach and diced green chilies into the egg mixture. Then, add the shredded cheddar cheese, mixing gently until evenly distributed.

Fill the Muffin Tin: Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full. This allows room for the muffins to rise.

Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes or until the egg is set and the tops are slightly golden. You can check doneness by inserting a toothpick; it should come out clean.

Cool and Serve: Once done, remove the muffins from the oven and let them cool for about 5 minutes in the tin before transferring them to a wire rack. Garnish with fresh cilantro if desired.

Storage Tips: These muffins can be stored in an airtight container in the fridge for up to 5 days, or frozen for longer storage. To reheat, simply warm them in the microwave or oven.
