8 oz mixed mushrooms (cremini, shiitake, and oyster), sliced

3 tbsp olive oil

Salt and pepper, to taste

4 cloves garlic, minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1 tsp fresh thyme leaves (or ½ tsp dried thyme)

1 tbsp lemon juice

8 slices of rustic bread (like sourdough or ciabatta)

Fresh parsley, chopped for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Mushrooms:

      a. On a baking tray, toss the sliced mushrooms with olive oil, salt, and pepper.

        b. Spread them out in a single layer and roast in the preheated oven for 20 minutes, or until golden and tender. Midway through, give them a stir for even cooking.

          Prepare the Alfredo Sauce:

            a. In a medium saucepan over medium heat, melt a small amount of olive oil (or a pat of butter).

              b. Add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned.

                c. Pour in the heavy cream, stir well, and let it simmer for 3-4 minutes, allowing it to thicken slightly.

                  d. Gradually whisk in the Parmesan cheese until smooth, followed by the thyme and lemon juice. Remove from heat and season with salt and pepper to taste.

                    Toast the Bread:

                      a. While the sauce is simmering, place the slices of bread on another baking tray.

                        b. Brush lightly with olive oil on both sides. Toast in the oven for about 5-7 minutes until golden brown, flipping halfway through.

                          Assemble the Toasts:

                            a. Once the bread is toasted, remove it from the oven.

                              b. Spread a generous layer of the Alfredo sauce onto each slice of toast.

                                c. Top each toast with the roasted mushrooms.

                                    a. Finish with a sprinkle of chopped fresh parsley for freshness and color.
