Ingredients

8 large waffles (store-bought or homemade)

8 slices of crispy cooked bacon, chopped

4 large eggs

2 cups whole milk

1 cup maple syrup (plus extra for serving)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

½ teaspoon salt

½ cup shredded cheddar cheese (optional)

Fresh blueberries or strawberries for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with non-stick cooking spray.

Prepare the Waffles: If using homemade waffles, prepare them according to your recipe and allow them to cool slightly. If using store-bought waffles, you can toast them lightly to enhance the flavor.

Layer the Base: Cut the waffles into quarters and layer half of them in the bottom of the prepared baking dish. Sprinkle half of the chopped bacon over the waffles.

Create the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, maple syrup, vanilla extract, cinnamon, and salt until fully combined.

Add Remaining Layers: Pour half of the egg mixture over the waffles and bacon in the baking dish. Then, layer the remaining waffle quarters on top, followed by the rest of the bacon. Pour the rest of the egg mixture evenly over the entire dish. If using, sprinkle shredded cheddar cheese on top.

Soak: Let the casserole sit for about 10-15 minutes to allow the waffles to soak up the egg mixture for optimal flavor and texture.

Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

Serve: Once baked, let the casserole cool for a few minutes before slicing. Serve warm, drizzling extra maple syrup on top and garnishing with fresh blueberries or strawberries if desired.

Enjoy: Indulge in this delightful mix of sweet, salty, and fluffy flavors perfect for brunch, breakfast, or even dessert!
