Garlic Herb Roasted Potatoes

2 lbs baby potatoes (any color)

4 cloves garlic, minced

4 tbsp olive oil

1 tsp dried oregano

1 tsp dried thyme

1 tsp rosemary (fresh or dried)

½ tsp paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prep the Potatoes: Wash and scrub the baby potatoes thoroughly. If they are large, cut them in half or quarters to ensure even cooking.

      Make the Herb Mixture: In a small bowl, whisk together the olive oil, minced garlic, oregano, thyme, rosemary, paprika, salt, and pepper until well combined.

        Toss the Potatoes: Place the cleaned potatoes in a large mixing bowl. Drizzle the herb mixture over the potatoes and toss well to coat them evenly.

          Roasting: Spread the coated potatoes in a single layer on a baking sheet lined with parchment paper or lightly greased.

            Bake: Roast the potatoes in the preheated oven for 25-30 minutes, stirring halfway through, until they are golden brown and crispy on the outside and tender inside.

              Garnish and Serve: Remove from the oven and sprinkle with freshly chopped parsley. Serve hot with lemon wedges on the side for an added zesty flavor.
