1.5 lbs baby potatoes (whole, preferably tri-colored)

4 tablespoons olive oil

4 cloves garlic (minced)

1 tablespoon fresh rosemary (chopped)

1 tablespoon fresh thyme (chopped)

1 tablespoon fresh parsley (chopped)

1 teaspoon sea salt

½ teaspoon black pepper

Optional: grated Parmesan cheese for sprinkling

Instructions
 

Preheat oven: Preheat your oven to 425°F (220°C).

    Prepare potatoes: Rinse the baby potatoes thoroughly and pat them dry. If they are larger than a golf ball, cut them in half.

      Mix seasoning: In a large bowl, combine the olive oil, minced garlic, chopped rosemary, thyme, parsley, sea salt, and black pepper. Stir it well until all ingredients are fully combined.

        Coat potatoes: Add the baby potatoes to the bowl and toss them until they are evenly coated with the herb and oil mixture.

          Arrange on baking sheet: Line a baking sheet with parchment paper for easier cleanup. Spread the potatoes in a single layer on the sheet, cut-side down for added crispiness.

            Roast potatoes: Roast in the preheated oven for about 25-30 minutes, flipping halfway through, until they are golden brown and fork-tender.

              Add finishing touches: If desired, sprinkle grated Parmesan cheese over the potatoes during the last 5 minutes of roasting for a cheesy twist.

                Serve: Once out of the oven, let them rest for a few minutes before serving. Garnish with additional fresh herbs if desired.
