4 boneless, skinless chicken breasts

4 cloves garlic, minced

2 tablespoons fresh parsley, chopped

1 tablespoon fresh thyme, chopped

1 tablespoon olive oil

Salt and pepper to taste

Juice of 1 lemon

For the Cheddar Potato Bites:

2 cups russet potatoes, peeled and diced

1 cup sharp cheddar cheese, shredded

1/4 cup green onions, sliced

1/4 cup sour cream

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/4 cup breadcrumbs (optional, for extra crunch)

Olive oil spray or canola oil spray

Instructions
 

Prepare the Garlic Herb Chicken:

    - In a medium bowl, mix the minced garlic, parsley, thyme, olive oil, lemon juice, salt, and pepper.

      - Place the chicken breasts in a large resealable bag or shallow dish and pour the marinade over the chicken. Seal or cover and refrigerate for at least 30 minutes, preferably 1 to 2 hours for enhanced flavor.

        Cook the Chicken:

          - Preheat your oven to 375°F (190°C).

            - Heat a large oven-safe skillet over medium-high heat. Remove the chicken from the marinade, letting any excess drip off, and sear each breast for about 5 minutes on each side until golden brown.

              - Transfer the skillet to the preheated oven and bake for an additional 15-20 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

                - Remove from the oven and let the chicken rest for a few minutes before slicing.
