Garlic Butter Chicken Spinach Pasta

8 oz (225g) spaghetti or your pasta of choice

2 large boneless, skinless chicken breasts

Salt and black pepper, to taste

4 tablespoons unsalted butter

5 cloves garlic, minced

1 teaspoon red pepper flakes (optional)

4 cups fresh spinach, roughly chopped

1 cup cherry tomatoes, halved

1 lemon, juiced and zested

1/2 cup grated Parmesan cheese

Fresh basil leaves, for garnish

Cook the Pasta: In a large pot of boiling salted water, add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Prepare the Chicken: While the pasta cooks, season both chicken breasts with salt and black pepper on both sides.

      Cook the Chicken: In a large skillet, heat 2 tablespoons of butter over medium heat. Add the chicken breasts to the skillet and cook for about 6-7 minutes on each side, or until cooked through and golden brown. Remove from the skillet, let it rest for a few minutes, and then slice into strips.

        Make the Garlic Butter Sauce: In the same skillet, add the remaining 2 tablespoons of butter and reduce the heat to low. Add the minced garlic and red pepper flakes (if using), sautéing for about 1-2 minutes until fragrant but not browned.

          Add Spinach and Tomatoes: Stir in the chopped spinach and cherry tomatoes, cooking until the spinach wilts and the tomatoes soften, about 3-4 minutes.

            Combine Ingredients: Add the cooked pasta directly to the skillet with the garlic butter sauce. Toss to combine, adding a little reserved pasta water as needed to create a light sauce. Stir in the lemon juice and zest.

              Add the Chicken and Cheese: Fold in the sliced chicken and grated Parmesan cheese, mixing until everything is well coated and heated through. Adjust seasoning with salt and pepper if necessary.
