1.5 lbs boneless, skinless chicken thighs

1 cup jasmine rice, rinsed and drained

4 cups chicken broth

6 cloves garlic, minced

1/2 cup unsalted butter (1 stick), melted

2 teaspoons dried Italian herbs (oregano, basil, thyme)

1 teaspoon paprika

Salt and pepper to taste

1 cup shredded mozzarella cheese

Fresh parsley, chopped (for garnish)

Zest of 1 lemon (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Chicken: In a large bowl, combine the melted butter, minced garlic, Italian herbs, paprika, salt, and pepper. Add the chicken thighs and coat them well with the garlic butter mixture.

      Layer the Ingredients: In a large baking dish, evenly spread the rinsed jasmine rice. Pour the chicken broth over the rice and then place the seasoned chicken thighs on top of the rice, ensuring they are evenly spaced.

        Bake the Dish: Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 25 minutes. This will help steam the rice and cook the chicken.

          Add Cheese: After 25 minutes, carefully remove the foil (watch out for steam) and sprinkle the shredded mozzarella cheese evenly over the chicken.

            Bake Again: Return the dish to the oven (without foil) and bake for an additional 15–20 minutes, or until the chicken is cooked through (internal temperature of 165°F) and the cheese is bubbling and golden.

              Garnish and Serve: Once done, remove from the oven and let it sit for about 5 minutes. Before serving, sprinkle with fresh parsley and lemon zest for added brightness.
