Ingredients

8 oz (225g) rotini pasta

1 cup ricotta cheese

1 cup cream cheese, softened

1 cup shredded mozzarella cheese

1 cup diced strawberries

1 cup diced peaches

1 cup diced kiwi

½ cup powdered sugar (adjust for sweetness)

1 tsp vanilla extract

1 tsp lemon juice

1 cup pizza sauce

½ cup mini marshmallows (optional, for a sweeter touch)

Fresh mint leaves for garnish

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 9x13 baking dish.

Cook the Pasta: Boil a large pot of salted water. Add rotini pasta and cook according to package directions until al dente. Drain and set aside.

Make the Cheese Mixture: In a large bowl, combine the ricotta cheese, cream cheese, powdered sugar, vanilla extract, and lemon juice. Mix well until smooth and creamy.

Combine Pasta and Cheese Mixture: Add the cooked rotini pasta to the cheese mixture. Stir until the pasta is evenly coated.

Layer the Fruits: Gently fold in the diced strawberries, peaches, and kiwi. If desired, add mini marshmallows for an extra layer of sweetness.

Assemble the Bake: Spread half of the pizza sauce in the bottom of the greased baking dish. Layer the pasta and fruit mixture evenly on top of the sauce. Pour the remaining pizza sauce over the pasta bake, spreading it evenly.

Add Cheese: Sprinkle the shredded mozzarella cheese on top of the pizza sauce layer.

Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

Garnish and Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh mint leaves before serving.

Enjoy this delicious and colorful Fruity Delight Pizza Pasta Bake, combining the rich flavors of pizza with the refreshing touch of fruits!
