Frozen Yogurt Tropical Trail Mix Bites

Ingredients
  

2 cups plain Greek yogurt (unsweetened)

3 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 cup granola (preferably tropical or coconut-flavored)

1/2 cup unsweetened shredded coconut

1/2 cup dried pineapple chunks

1/2 cup dried mango slices

1/4 cup roasted cashews (chopped)

1/4 cup dark chocolate chips (optional)

Fresh tropical fruit for garnishing (like sliced bananas or extra mango)

Prepare the Yogurt Mixture: In a large mixing bowl, combine the plain Greek yogurt, honey (or maple syrup), and vanilla extract. Mix well until smooth and creamy. Taste and adjust the sweetness if desirable by adding more honey or syrup.

    Mix in the Tropical Ingredients: Gently fold in the granola, shredded coconut, dried pineapple, dried mango, and chopped cashews until evenly distributed throughout the yogurt mixture. If you’re using dark chocolate chips, fold those in as well.

      Mold the Bites: Line a mini muffin tin with silicone or paper liners for easy removal. Spoon the yogurt mixture into each cup, filling them almost to the top. You could also use a silicone ice cube tray for bite-sized treats.

        Freeze Them: Place the muffin tin (or tray) in the freezer and let the bowls freeze for about 4 hours, or until completely solid.
