2 large ripe mangoes, peeled and diced

1 teaspoon vanilla extract

1 teaspoon lemon juice

1/2 cup granola or crushed nuts (for topping)

Fresh mint leaves (for garnish, optional)

Combine Yogurt Mixture: In a mixing bowl, combine the plain Greek yogurt, honey or maple syrup, vanilla extract, grated ginger, and lemon juice. Mix well until all ingredients are smoothly blended.

    Prepare Mango Layer: In a separate bowl, take the diced mangoes and mash half of them with a fork. Leave the other half diced for texture. You can add a teaspoon of honey if you want the mango layer sweeter.

      Layer the Stacks: In small cups or molds, start by adding a spoonful of the yogurt mixture as the first layer.
