Ingredients

2 ripe mangoes, peeled and diced

2 cups plain Greek yogurt (or plant-based yogurt)

1/4 cup honey or maple syrup (adjust to taste)

1/4 cup chia seeds

1 teaspoon vanilla extract

Zest of 1 lime

Pinch of salt

1/2 cup shredded coconut (optional, for coating)

Instructions

Puree the Mango: In a blender, combine the diced mangoes with half of the Greek yogurt (1 cup) and blend until smooth. This will be your mango layer.

Mix the Yogurt Base: In a separate bowl, mix the remaining Greek yogurt, honey (or maple syrup), chia seeds, vanilla extract, lime zest, and a pinch of salt until well combined. The chia seeds will create a thicker texture as they hydrate.

Layering: In a silicone ice cube tray or mini muffin tin, first pour a small layer of the mango puree. Freeze for about 30 minutes until slightly firm.

Add Yogurt Layer: After the mango layer has set, spoon the yogurt mixture on top of the frozen mango layer, filling the tray almost to the top. Smooth out the surface.

Final Freeze: Return the filled tray to the freezer and let it chill for at least 4 hours or until fully frozen.

Serve: To release the frozen rounds, gently twist the silicone tray or run it under warm water for a few seconds. If desired, roll the rounds in shredded coconut for an extra tropical touch.

Enjoy: Serve immediately for a refreshing snack or dessert! These rounds can also be stored in an airtight container in the freezer for up to 2 weeks.
