Prep the Cherries: Start by washing and pitting the fresh cherries. Once pitted, chop them into small pieces and set aside.

    Melt the Chocolate: In a microwave-safe bowl, add the dark chocolate chips. Heat in 30-second intervals, stirring after each interval until fully melted and smooth. Set aside to cool slightly.

      Mix Yogurt Base: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, almond extract (if using), and a pinch of sea salt. Stir well until the mixture is smooth and creamy.

        Combine Ingredients: Gently fold the chopped cherries into the yogurt mixture until evenly distributed.

          Prepare for Freezing: If using, line a baking sheet with parchment paper or lightly spray with cooking spray. If using a silicone mold, you can skip this step.

            Form the Discs: Using a spoon or an ice cream scoop, drop dollops of the yogurt-cherry mixture onto the prepared baking sheet/mold. Flatten each dollop slightly with the back of a spoon to form into discs approximately 1-inch thick.

                Freeze: Place the baking sheet in the freezer and let the yogurt discs freeze for at least 2-4 hours or until completely solid.
