2 cups fresh or frozen blueberries

1 ½ cups whole wheat flour

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

1 cup plain Greek yogurt

¼ cup honey or maple syrup

2 large eggs

1 teaspoon vanilla extract

½ teaspoon cinnamon

1 tablespoon lemon juice

Zest of 1 lemon

¼ cup coconut oil, melted (or any light oil)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners or lightly grease it with oil.

    Mix Dry Ingredients: In a large bowl, whisk together the whole wheat flour, baking powder, baking soda, salt, and cinnamon.

      Prepare Wet Ingredients: In a separate bowl, combine the Greek yogurt, honey (or maple syrup), eggs, vanilla extract, lemon juice, and lemon zest. Whisk until smooth.
