Ingredients

2 cups plain Greek yogurt (or your favorite yogurt alternative)

1 cup fresh blueberries (plus extra for topping)

1/4 cup honey or maple syrup (adjust based on yogurt tanginess)

Juice and zest of 1 large lemon

1 teaspoon vanilla extract

Pinch of salt

6 small paper muffin cups or silicone molds

Instructions

In a medium bowl, combine the Greek yogurt, honey or maple syrup, lemon juice, lemon zest, vanilla extract, and a pinch of salt. Mix well until smooth.

Gently fold in the fresh blueberries, ensuring they are evenly distributed throughout the yogurt mixture.

Line a muffin tin with paper muffin cups or use silicone molds for easy removal.

Scoop the yogurt mixture into each cup, filling them about 3/4 full.

Top each cup with a few additional blueberries for garnish.

Place the muffin tin or molds in the freezer and freeze for at least 4-5 hours, or until completely solid.

To serve, remove the yogurt cups from the freezer and let them sit at room temperature for 5-10 minutes to slightly soften before enjoying.
