2 cups of vanilla Greek yogurt

1 cup of cake mix (preferably funfetti)

¼ cup of milk (dairy or non-dairy)

¼ cup of honey or maple syrup

1 tsp of vanilla extract

½ cup of colorful sprinkles (plus extra for topping)

1 cup of crushed graham crackers (for the crust)

½ cup of unsalted melted butter (or coconut oil)

Pinch of salt

Instructions
 

Prepare the Crust: In a mixing bowl, combine the crushed graham crackers, melted butter, and a pinch of salt. Mix until well combined and resembles wet sand.

    Press the Crust: Line an 8x8 inch square baking dish with parchment paper. Pour the graham cracker mixture into the dish and press it down firmly with the back of a measuring cup to create an even crust. Place in the freezer to set for about 10 minutes.

      Make the Yogurt Layer: In a mixing bowl, combine the vanilla Greek yogurt, cake mix, milk, honey (or maple syrup), and vanilla extract. Stir until smooth and fully combined.

        Add Sprinkles: Gently fold in ½ cup of colorful sprinkles into the yogurt mixture, ensuring they are evenly distributed.

          Assemble the Cake Bars: Remove the crust from the freezer. Pour the yogurt mixture over the crust, smoothing it out evenly with a spatula. Top with additional sprinkles if desired.

            Freeze: Cover the baking dish with plastic wrap and freeze for at least 4-5 hours, or until completely firm.

              Cut the Bars: Once frozen, use the parchment paper to lift the cake out of the dish. Cut into squares or bars with a sharp knife.

                Serve: Enjoy immediately, or store the bars in an airtight container in the freezer. These can be garnished with extra sprinkles just before serving for an added festive touch!
