2 cups rolled oats

1/2 cup almond butter (or any nut butter)

1/4 cup honey or maple syrup

1/4 teaspoon salt

1 1/2 cups Greek yogurt (plain or vanilla)

1 cup mixed berries (fresh or frozen - strawberries, blueberries, raspberries)

1 tablespoon lemon juice

1 teaspoon vanilla extract

Optional: 1/4 cup chopped nuts or seeds for added crunch

Prepare the Base: In a large mixing bowl, combine the rolled oats, almond butter, honey (or maple syrup), and salt. Stir until well combined. The mixture should resemble a thick dough.

    Line the Pan: Line an 8x8-inch square baking dish with parchment paper, leaving some overhang for easy removal later. Press the oat mixture evenly into the bottom of the dish, creating a solid crust. Set aside.

      Make the Berry Yogurt Mixture: In a separate bowl, combine the Greek yogurt, lemon juice, and vanilla extract. If using fresh berries, chop them into small pieces; if using frozen berries, ensure they are thawed and drained of excess liquid. Gently fold the berries into the yogurt mixture.

        Assemble the Squares: Pour the berry yogurt mixture over the prepared oat crust. Using a spatula, spread it evenly across the surface.

          Swirl It Up: For a marbled effect, use a knife or a toothpick to gently swirl the top layer of the yogurt without fully mixing it in. You want a little bit of the oat crust to peek through with bursts of berry color.
