Frozen Yogurt Berry Bars

Ingredients
  

2 cups Greek yogurt (plain or flavored)

1 cup mixed berries (fresh or frozen: strawberries, blueberries, raspberries)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/4 cup granola (optional, for crunch)

1 tablespoon lemon juice

A pinch of salt

Prepare the Mixed Berries: If using frozen berries, let them thaw slightly. If using fresh, rinse them under cold water. Chop larger strawberries into smaller pieces.

    Blend the Yogurt Mixture: In a blender or a mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, lemon juice, and a pinch of salt. Blend until smooth and creamy. Adjust sweetness to taste.

      Fold in Berries: Gently fold the mixed berries into the yogurt mixture. If you’d like, keep some whole berries for added texture.

        Prepare the Mold: Line an 8x8-inch square baking dish or a silicone mold with parchment paper, allowing some overhang for easy removal later.

          Layer the Mixture: Pour the yogurt and berry mixture into the prepared baking dish, spreading it evenly. If you're using granola, sprinkle it on top for an added crunch.

            Freeze: Cover the baking dish with plastic wrap or aluminum foil and place it in the freezer for at least 4-6 hours, or until fully set.

              Cut into Bars: Once frozen solid, remove from the freezer. Lift out the bars using the parchment overhang. Cut into squares or rectangles as desired.

                Serve and Enjoy: These bars can be enjoyed immediately, or you can wrap them individually in parchment paper and store them in an airtight container in the freezer for up to one month!
