Ingredients

2 cups rolled oats

1 cup unsweetened applesauce

⅓ cup honey or maple syrup

1 teaspoon vanilla extract

½ teaspoon cinnamon

½ cup chopped walnuts

1 medium apple, peeled and diced (Granny Smith or Honeycrisp recommended)

1 cup plain Greek yogurt (or dairy-free yogurt)

1 tablespoon lemon juice

Optional: 1 tablespoon flaxseeds or chia seeds for added nutrition

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper, leaving an overhang for easy removal later.

Oat Mixture: In a large mixing bowl, combine the rolled oats, applesauce, honey or maple syrup, vanilla extract, cinnamon, and chopped walnuts. Stir until well mixed. If using, add flaxseeds or chia seeds for added texture and nutrition.

Incorporate Apples: Gently fold in the diced apple, ensuring they are evenly distributed throughout the oat mixture.

Spread Mixture: Pour the mixture into the prepared baking dish, and evenly spread it out using a spatula or the back of a spoon.

Bake: Bake in the preheated oven for 25-30 minutes, or until the edges turn golden brown and a toothpick inserted into the center comes out clean.

Cool Down: Once baked, remove the dish from the oven and allow the squares to cool in the pan for about 10 minutes. Then, lift the squares out using the parchment paper and let them cool completely on a wire rack.

Prepare Yogurt Topping: In a small bowl, mix the Greek yogurt with lemon juice to give it a slight tang. You may also add a bit of honey or sweetener if desired.

Assemble Squares: Once completely cooled, cut the oat base into squares or bars. Top each square with a generous dollop of the lemony Greek yogurt.

Freeze: If you want to enjoy them as frozen treats, place the squares on a baking sheet and freeze them for at least 1 hour. Once frozen, transfer the squares to an airtight container or freezer bag to store.

Serve: Enjoy your Frozen Yogurt Apple Walnut Oat Squares straight from the freezer, or let them sit at room temperature for a few minutes before serving for a softer texture.
