For the Apple Layer:

2 large apples, peeled, cored, and finely chopped (Granny Smith or Honeycrisp work well)

1 tablespoon lemon juice

1 tablespoon cinnamon

2 tablespoons brown sugar

1 teaspoon vanilla extract

1 tablespoon cornstarch

1 tablespoon water

For the Yogurt Layer:

3 cups Greek yogurt (plain or vanilla)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

For the Crust:

1 1/2 cups graham cracker crumbs

1/3 cup melted coconut oil or unsalted butter

2 tablespoons sugar

1/4 teaspoon salt

For Topping:

Optional: crushed nuts or crumbled granola

Instructions
 

Prepare the Apple Mixture:

    - In a medium saucepan over medium heat, combine the finely chopped apples, lemon juice, cinnamon, brown sugar, vanilla extract, and cornstarch mixed with water.

      - Cook for about 5-7 minutes, stirring occasionally, until the apples are just tender and the mixture has thickened.

        - Remove from heat and let it cool to room temperature.

          Make the Yogurt Layer:

            - In a large bowl, mix the Greek yogurt, honey (or maple syrup), and vanilla extract until well combined. Taste and adjust sweetness if necessary.

              Prepare the Crust:

                - In a mixing bowl, combine graham cracker crumbs, melted coconut oil (or butter), sugar, and salt. Stir until the crumbs are well coated.

                  - Press the mixture firmly into the bottom of a parchment-lined 9x9 inch baking dish to form an even layer as the crust. Set aside.

                    Assemble the Layers:

                      - Spread half of the yogurt mixture over the crust layer evenly.

                        - Spoon the apple mixture over the yogurt layer, spreading it evenly to cover.

                          - Top with the remaining yogurt mixture, smoothing it over the apples.

                            Freeze the Bars:

                              - Cover the baking dish with plastic wrap or foil and place it in the freezer for at least 4-6 hours, or until completely frozen.

                                Serving:

                                  - Once frozen, lift the bars out of the pan using the parchment paper. Cut into squares or rectangles using a sharp knife.

                                    - If desired, sprinkle with crushed nuts or granola before serving.
