Ingredients
  

1 cup fresh or frozen raspberries

2 tablespoons honey or maple syrup (adjust for sweetness)

2 tablespoons lemon juice (freshly squeezed)

Zest of 1 lemon

1/4 cup chia seeds

1/2 cup coconut milk (or any milk of choice)

1/4 teaspoon vanilla extract

Pinch of salt

Optional toppings: shredded coconut, crushed nuts, or granola

Instructions
 

In a medium bowl, combine the fresh or frozen raspberries with honey (or maple syrup), lemon juice, and lemon zest. Mash the raspberries gently with a fork until semi-pureed but still chunky to retain some texture.

    In another bowl, whisk together the chia seeds, coconut milk, vanilla extract, and a pinch of salt. Let it sit for about 5 minutes, allowing the chia seeds to absorb moisture and thicken the mixture.

      Once the chia mixture has thickened, combine it with the raspberry mixture. Stir well until fully incorporated.

        Spoon the combined mixture into silicone molds or mini muffin tins. Press down gently to fill each mold completely.

          If desired, sprinkle your choice of toppings (such as shredded coconut, crushed nuts, or granola) on top of each bite for extra crunch and flavor.

            Place the molds in the freezer and freeze for at least 2 hours, or until completely firm.

              Once frozen, carefully remove the chia bites from the molds and place them in an airtight container. Store in the freezer for up to 2 weeks.

                To enjoy, simply remove a few bites from the freezer and let them sit at room temperature for a couple of minutes before indulging in these refreshing treats!
