2 ripe peaches, peeled and diced

1 ripe mango, peeled and diced

1 cup coconut cream (chilled)

1 cup Greek yogurt (plain or vanilla)

1/4 cup honey or maple syrup (adjust for sweetness)

1 tsp vanilla extract

1 tbsp lemon juice

Pinch of salt

Optional: Fresh mint leaves for garnish

Prepare the Fruit: In a blender, combine the diced peaches and mangoes. Blend until smooth and creamy. If you prefer a chunkier texture, reserve a small amount of diced fruit and stir it back in later.

    Mix the Cream Mixture: In a separate mixing bowl, whisk together the chilled coconut cream, Greek yogurt, honey (or maple syrup), vanilla extract, lemon juice, and a pinch of salt until well combined and smooth.

      Combine: Fold the blended peach-mango mixture into the cream mixture gently until fully incorporated. If using, add the reserved peach and mango pieces for added texture.

        Prepare the Pan: Line an 8x8 inch square baking dish with parchment paper, leaving some overhang for easy removal. Pour the mixture into the prepared pan, smoothing the top with a spatula.

          Freeze: Cover the dish with plastic wrap and place it in the freezer for about 4-6 hours, or until fully set.
