Frozen Greek Yogurt Strawberry Bombs

2 cups Greek yogurt (plain or flavored)

1 cup fresh strawberries, hulled and halved

2 tablespoons honey (or maple syrup for a vegan option)

1 teaspoon vanilla extract

Pinch of salt

1 cup granola or crushed nuts (optional, for extra crunch)

Mini muffin tin or silicone molds

Instructions
 

Prepare the Strawberries: In a medium bowl, combine the halved strawberries with 1 tablespoon of honey (or maple syrup) and a pinch of salt. Mix gently, allowing the strawberries to soak up the sweetness. Let sit for about 10 minutes.

    Make the Yogurt Mixture: In another bowl, whisk together the Greek yogurt, remaining honey, and vanilla extract until smooth and well-combined.

      Assemble the Bombs: Spoon a layer of the yogurt mixture into each mini muffin cup or silicone mold, filling it about 1/3 full. Add a piece or two of the strawberry mixture into each cup, then top with more yogurt until the molds are about 3/4 full.

        Add Crunch (Optional): If you're adding granola or crushed nuts, sprinkle a small amount on top of the yogurt layer in each mold.

          Freeze: Place the muffin tin or molds into the freezer. Freeze for at least 4-6 hours or until completely solid.

            Unmold and Serve: Once frozen, carefully remove the yogurt bombs from the molds. You can run warm water over the bottom of the muffin tin for easier release. Serve immediately or store in a zip-top bag in the freezer for later.
