Ingredients

2 cups plain Greek yogurt

1 tablespoon honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 cup granola (your favorite mix, preferably with nuts and dried fruits)

1 cup fresh mixed berries (strawberries, blueberries, raspberries)

1/4 cup chopped nuts (almonds or walnuts for added crunch)

Optional: 2 tablespoons chia seeds or flaxseeds for added nutrition

Instructions

Prepare the Yogurt Mixture: In a medium bowl, combine the Greek yogurt, honey or maple syrup, and vanilla extract. Mix until smooth and well-combined. Adjust sweetness to your preference.

Arrange Cups: Line a muffin tin with paper liners or silicone muffin cups. This will help with easy removal after freezing.

Layer the Ingredients: Spoon a layer of the yogurt mixture into each muffin cup, filling them about halfway. Next, sprinkle a layer of granola over each yogurt layer, followed by a layer of fresh mixed berries. Repeat the layering process, adding another yogurt layer, granola, and berries until the cups are full, leaving a little space at the top.

Top it Off: For an extra crunch and flavor, sprinkle the chopped nuts on the top layer. If you’re including the chia seeds or flaxseeds, sprinkle them on top as well.

Freeze: Place the muffin tin in the freezer for at least 4-6 hours or until completely frozen. This helps the cups hold their shape when removed.

Serve: Once frozen solid, remove the cups from the muffin tin and peel away the liners. Serve immediately, or store them in an airtight container in the freezer for up to 2 weeks.

Enjoy: Perfect as a healthy snack, breakfast treat, or dessert on a hot day!
