Frozen Blueberry Greek Yogurt Pops

Ingredients
  

2 cups fresh or frozen blueberries

1 cup Greek yogurt (plain or vanilla)

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1 tablespoon lemon juice

1 teaspoon vanilla extract

Pinch of salt

Optional: Extra blueberries and mint leaves for garnish

Instructions
 

Prepare the Blueberries: If using fresh blueberries, rinse them thoroughly and set aside. If using frozen blueberries, allow them to thaw for about 10 minutes before use.

    Blend the Mixture: In a blender or food processor, combine the blueberries, Greek yogurt, honey (or maple syrup), lemon juice, vanilla extract, and a pinch of salt. Blend until smooth. For added texture, you can blend only half the blueberries and mash them later into the Greek yogurt mixture.

      Assemble the Pops: If you prefer chunks of fruit in your pops, fold in remaining whole blueberries into the mixture after blending. Then, pour the smoothie-like mixture into popsicle molds, filling them about 3/4 full to allow for expansion.

        Insert Sticks: If your popsicle mold has a slot for sticks, insert them into the filled molds. If not, you can cover the molds with plastic wrap and poke a stick through.

          Freeze: Place the molds in the freezer for at least 4-6 hours, or until completely solid.

            Serve: Once frozen solid, remove the popsicles from the molds. If they stick, run warm water over the outside of the molds for a few seconds to loosen them. Enjoy your refreshing blueberry Greek yogurt pops!

              Garnish (optional): For an added touch, serve with a few extra blueberries and a sprig of fresh mint on top.
