1 ½ cups all-purpose flour

1 cup fresh or frozen cranberries, roughly chopped

¾ cup granulated sugar

2 tsp baking powder

½ tsp baking soda

½ tsp salt

½ cup unsalted butter, melted and cooled

2 large eggs

¾ cup buttermilk (or make your own with milk and vinegar)

1 tsp vanilla extract

Zest of 1 orange (optional, for added flavor)

¼ cup walnuts or pecans, chopped (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a standard muffin tin with paper liners or grease it lightly with cooking spray.

    Prepare the Flour Mixture: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined. Make a well in the center of the dry ingredients.

      Mix the Wet Ingredients: In a separate bowl, combine the melted butter, eggs, buttermilk, vanilla extract, and orange zest (if using). Mix well until the ingredients are thoroughly combined.
