2 cups fresh figs, chopped

1 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 cup rolled oats

1 cup almond flour

1 teaspoon cinnamon

½ teaspoon salt

½ cup unsalted butter, melted

2 large eggs

½ cup milk (or plant-based alternative)

1 cup Greek yogurt (optional, for serving)

Fresh mint leaves (for garnish)

Prepare the Fig Jam: In a saucepan over medium heat, combine the chopped figs, sugar, lemon juice, and vanilla extract. Stir occasionally until the mixture begins to simmer. Cook for about 15-20 minutes until the figs are soft and syrupy. Remove from heat and let it cool slightly.

    Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch casserole dish or a similar-sized baking dish with butter or non-stick spray.

      Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, cinnamon, and salt. Mix well until combined.

        Combine Wet Ingredients: In another bowl, whisk together the melted butter, eggs, and milk until smooth.

          Combine Mixtures: Pour the wet mixture into the dry ingredients and stir until everything is evenly coated.
