Fall Crockpot Chili with Cheddar Swirls

1 lb ground beef (or turkey for a healthier option)

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 yellow bell pepper, diced

1 can (14.5 oz) diced tomatoes, undrained

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

2 cups vegetable or chicken broth

1 tbsp chili powder

1 tsp cumin

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust to taste)

Salt and pepper to taste

1 cup corn (fresh, frozen, or canned)

1 cup shredded cheddar cheese (plus extra for topping)

1/4 cup cream cheese, softened

Instructions
 

Brown the Meat: In a skillet over medium heat, brown the ground beef (or turkey) until fully cooked. Drain excess fat if necessary, and transfer the meat to the crockpot.

    Add Vegetables: In the same skillet, sauté the diced onion, garlic, and bell peppers until softened, about 5 minutes. Add them to the crockpot with the meat.

      Combine Ingredients: Add the diced tomatoes, kidney beans, black beans, broth, corn, chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper to the crockpot. Stir until everything is well combined.

        Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until all flavors meld together.

          Make Cheddar Swirls: About 30 minutes before serving, mix the softened cream cheese and shredded cheddar cheese in a bowl. Stir until smooth.

            Create Swirls: Spoon the cheese mixture into a piping bag or a zip-top bag with a corner snipped off. Squeeze the cheese mixture directly into the hot chili in a swirl pattern, ensuring it melts and blends beautifully into the dish.

              Serve: Once the chili is fully cooked, ladle it into bowls and top with additional shredded cheddar cheese. Serve hot with your favorite cornbread or tortilla chips.
