Ingredients

2 medium zucchinis

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried Italian herbs (oregano, basil, rosemary)

Salt and pepper to taste

2 large eggs

1/4 cup all-purpose flour

Cooking spray or olive oil for baking

Instructions

Preheat your oven: Start by preheating your oven to 425°F (220°C). This will ensure that your fries get crispy.

Prepare the zucchinis: Wash the zucchinis thoroughly. Cut off the ends and slice them into fries, about 1/4 inch thick.

Set up the breading station: In one shallow dish, place the flour. In a second dish, beat the eggs. In a third dish, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dried Italian herbs, salt, and pepper.

Bread the zucchini: Dip each zucchini fry into the flour, shaking off any excess. Next, dip it into the beaten eggs, allowing the excess to drip off before rolling it in the breadcrumb mixture. Make sure each fry is well-coated.

Arrange on a baking sheet: Line a baking sheet with parchment paper or lightly grease it with cooking spray. Place the breaded zucchini fries on the sheet in a single layer, ensuring they aren’t touching for maximum crispiness.

Bake the fries: Lightly spray the tops of the zucchini fries with cooking spray or drizzle a little olive oil on top. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until they are golden brown and crispy.

Serve and enjoy: Remove from the oven and let cool slightly before serving. These zucchini fries are delicious on their own or paired with your favorite dipping sauce, like marinara or ranch!
