2 cups cooked jasmine rice (day-old is best)

1 cup mixed vegetables (carrots, peas, bell peppers, and corn)

2 tablespoons vegetable oil

2 large eggs, lightly beaten

3 cloves garlic, minced

2 green onions, chopped

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon oyster sauce (optional)

Salt and pepper to taste

1 teaspoon sesame oil (for finishing)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Prepare Rice: If using fresh rice, spread it out on a tray and let it cool for a few minutes to reduce stickiness.

    Heat the Pan: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmered but not smoking.

      Cook Eggs: Add the beaten eggs and scramble until fully cooked. Remove them from the pan and set aside.

        Sauté Aromatics: In the same skillet, add the minced garlic and stir-fry for about 30 seconds until fragrant.
