8 oz (225g) pasta (penne or rotini work best)

1 lb (450g) ground beef or turkey

1 packet (1 oz) taco seasoning

1 can (15 oz) diced tomatoes with green chilies (drained)

1 can (15 oz) kidney beans (rinsed and drained)

1 cup corn (frozen or canned)

1 cup shredded cheddar cheese

1 cup sour cream

1 tablespoon olive oil

1/2 cup chopped fresh cilantro (optional)

Salt and pepper, to taste

Sliced jalapeƱos and lime wedges for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

    Brown the Meat: In a large skillet over medium heat, add the olive oil. Once heated, add the ground beef or turkey. Cook until browned, breaking it apart with a spatula. Season with a pinch of salt and pepper.

      Add Seasoning: Sprinkle the taco seasoning over the cooked meat. Stir well to ensure the meat is evenly coated. If needed, add a splash of water (about 2-3 tablespoons) to help the seasoning distribute evenly.

        Combine Ingredients: To the skillet, add the drained diced tomatoes, kidney beans, and corn. Stir to combine and allow the mixture to simmer for about 5 minutes, letting the flavors meld together.
