1 tablespoon olive oil

4 cloves garlic, minced

1 can (14 oz) diced tomatoes (with juices)

2 cups vegetable broth

1 cup heavy cream (or coconut cream for a dairy-free version)

1 teaspoon dried oregano

1 teaspoon sugar (to balance acidity)

1/2 teaspoon crushed red pepper flakes (optional)

Salt and pepper to taste

1 cup fresh basil leaves, chopped (plus more for garnish)

1/2 cup grated Parmesan cheese (or nutritional yeast for dairy-free option)

Sauté Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to let it burn.

    Add Tomatoes and Broth: Pour in the diced tomatoes (with juices) and vegetable broth. Stir well to combine.

      Incorporate Pasta: Bring the mixture to a gentle boil and then add the pasta. Stir to ensure all pasta is submerged in the liquid.
