2 cups cooked chicken, shredded

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

4 large flour tortillas

1 teaspoon ground cumin

1 teaspoon chili powder

2 tablespoons olive oil

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Salsa and sour cream (for serving)

Instructions
 

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, black beans, corn, cumin, chili powder, salt, and pepper. Mix everything until well combined.

    Assemble the Quesadillas: Heat a large skillet over medium heat and add 1 tablespoon of olive oil.

      - Place one tortilla in the skillet.

        - On half of the tortilla, layer 1/4 of the chicken mixture and top it with 1/4 cup of both shredded cheeses.

          - Fold the tortilla in half to cover the filling and press down gently.

            Cook the Quesadilla: Cook for about 3-4 minutes on one side until golden brown and the cheese starts to melt. Carefully flip it over and cook for another 3-4 minutes until the other side is golden and crispy.

              Repeat the Process: Remove the cooked quesadilla from the skillet and place it on a cutting board. Repeat the process with the remaining tortillas and filling. Add more olive oil to the skillet as needed.

                Serve: Once all quesadillas are cooked, cut them into wedges. Garnish with fresh cilantro and serve hot with salsa and sour cream on the side.
